Vedat Başaran

Vedat Başaran was born in 1963 in Novi Pazar (Yenipazar), formerly part of Yugoslavia, and is a chef specialized in Turkish cuisine, particularly Ottoman culinary culture. He graduated from the Tourism and Hotel Management Department of Uludağ University and later completed a master’s degree in catering and hospitality management in London.

Başaran began his professional career in London. After returning to Türkiye, he worked at the TURING Association and later became part of the founding team of Çırağan Palace Kempinski. In 1997, he established Periye Restaurant and later founded Karakol Restaurant within Topkapı Palace.

Driven by his deep interest in Ottoman cuisine, he learned Ottoman Turkish and played an important role in bringing historical recipes back into contemporary gastronomy. Throughout his career, he has collaborated with internationally renowned chefs and received numerous awards.

Başaran is also an active member of gastronomy organizations, including the Mutfak Dostları Association and other culinary institutions.
